Lychee and Grapefruit Swizzle – Finlandia Grapefruit vodka, lychee liquer, fresh lemon juice and sugar syrup
Vanilla and Rum Orange Julep – El Dorado 5yr, licor 43 and vanilla de Madagascar made in the traditional julep fashion
The South Smoke Martini – Four Roses Small Batch, Cocunut Schnapps, agave syrup and fresh lime

10 Cane Honey Treacle – 10 Cane rum and honey made as an old fashioned topped with a splash of apple juice
Cosmopolitan – Made the “Toby Cecchini” way with citrus vodka, Cointreau, a touch of lime and cranberry juice
Gin/Vodka Martini – Made with Belvedere vodka or Plymouth gin. Have it stirred or shaken in any way you like. The Elixer of Quietude
Sidecar – Made using equal measures of Hennessey VS, Cointreau and lemon juice as recommended by the legendary bar tender “Pat MacGarry”
Magarita – Some claim this drink pays homage to “Rita Hayworth” made with Ocho Blanco, triple sec and lime juice
Manhattan – “Strong and simple” or the king of cocktails made with small roses four batch, have it sweet, dry or perfect
Mojito - The Cuban classic made with El Dorado 5yr, fresh mint, sugar and lime, or ask for one of our house varients
Old Fashioned - Some claim this to be the earliest defining cocktail. A favourit of “Colonel James E Pepper” in the 1880’s bourbon, sugar, water and a hint of orange
Whiskey Sour – Bourbon, lemon, sugar syrup, and egg white, or if you prefer ask for a different base spirit such as amaretto
Mai Tai – Quite simply “ out of this world” or “Mai Tai – ro ae!” Made with El Dorado 5yr, triple sec, orgeat syrup, sugar syrup and lime
Singapore Sling – Created by “Ngiam Tong Boon” for the long bar in the Raffles Hotel Singapore. Equal measures of gin, Benedictine, lemon juice, cherry liquer topped with soda
The “Good Neighbour Policy” at the BilberryThis refers to the time when Daiquiris became incredibly popular in the 1940’s in the USA. Wartime rationing made whiskey, vodka, etc, hard to come by, yet because of Roosevelt’s Good Neighbour Policy (which opened up trade and travel relations with Latin America, Cuba and the Caribbean), rum was easily obtainable. The Good Neighbour policy (also known as “The Pan-American program”), helped make Latin America seem fashionable. As a consequence, rum-based drinks (once frowned upon as being the domain of sailors and down-and-outs), also became fashionable, and the Daiquiri saw a tremendous rise in popularity in the US. The Bilberry bar pays homage to the increasing popular Daiquiri with a few of our favourites made with El Dorado 3yr and 5yr.
The Daiquiri – Aged rum, fresh lime and sugar syrup
Fruit Daiquiri – Aged rum, fresh lime then chose from fresh strawberries, rasberrys, mango or any other seasonal fruit we have and a dash of sugar syrup
The Agave Daiquiri – Aged rum, fresh lime and 100% Agave syrup
Honey Suckle Daiquiri – Light rum, orange blossom honey, freshly squeezed orange with fresh lemon and lime
The Hemmingway Daiquiri – Light rum, grapefruit juice, maraschino liquer and fresh lime with or without sugar syrup
Daiquiri de luxe – Light rum, lime cordial, orgeat syrup and fresh lime
Black and White Daiquiri – Fresh blackberries, aged rum, coconut syrup, crème de mure and fresh lime
Snow White Daiquiri – Light rum, fresh pineapple juice, fresh lime, sugar syrup and egg white
Mint and Honey Daiquiri – Light rum, runny honey, fresh mint leaves and fresh lime
Sparkling Bilberry Bellini – White peach puree, a touch of lemon juice topped with prosecco, or try it with a different flavour of puree such as mango
Jayne Mansfield – Fresh Strawberries, light rum, crème de fraise topped with prosecco
French 77 – St Germain elderflower liquer and lemon juice topped with house prosecco Kir
Royale – Simply crème de cassis topped with house prosecco
